Crushed Carrots With Harissa and Pistachios
Sweet + Spicey
The sweetness of carrots makes them a best selling vegetable in North Africa, where the combination of sweet, sour and spicy is used to create some unusually harmonious creations.
Hearty Tagines
Tagines blending hearty meats and dried fruits, a colourful spread of salads to open a family meal, and a bunch of savoury fillings encased in paper-thin pastry, carrots are ideal for all of them.
For this recipe, cooked carrots are crushed to make a sharp and hot spread that you can bring to the table as a starter or on a large platter with a pile of freshly baked pitta breads. This quick and simple recipe is both versatile and practical and can turn any bland dish into a fiery party. You can add more Ourka Harissa if you want to increase the heat.
Serves Four
- 1 tbsp olive oil, plus extra for drizzling
- 15g unsalted butter
- 1kg carrots, peeled and cut into 2cm slices
- 200mm vegetable stock
- Grated zest of 1 orange
- 1 garlic clove, crushed
- 1 tbsp Millstone Ourika Harissa
- Grated zest of 1 lemon
- 200g Greek yoghurt
- 1tbsp lemon juice
- 25g shelled unsalted pistachios, roughly chopped
- Salt and pepper
The Recipe
Place the olive oil and butter in a large sauté pan on a medium high heat. Add the carrots and sauté for 6 minutes, stirring often; they need to soften and take on a bit of colour. Add the vegetable stock, reduce the heat to medium to low, cover the pan and cook for another 25 minutes, until the carrots are completely soft and there is hardly any liquid left. Transfer the carrots to the food processor, add 3/4 teaspoon of salt and blitz briefly to form a coarse paste. Leave to cool and then add the orange zest, garlic, Millstone Ourika Harissa, half the lemon zest and some black pepper. Stir to combine.
Mix together the yoghurt, lemon juice, remaining lemon zest and 1/4 teaspoon of salt.
Spread the yoghurt out on a serving platter and spoon the carrot mixture on top. Sprinkle with pistachios. As an additional step, charring the dish once over quickly with a chef's blow torch can bring a new depth to your dish. It's a lot of the same reason we brown vegetables. Heat creates reactions with sugars, amino acids, and proteins to create new flavor molecules and aromas. You end up with a depth of flavour you'll never have when a vegetable is raw.
To finish, drizzle with a little olive oil and serve.
