What inspired Millstone?

At Millstone, our philosophy mirrors the enduring motion of the traditional millstone, symbolising a continuous journey into taste, of exploration and refinement. Like the rhythmic revolution of the ancient millstone, we embrace the simplicity of our craft, preserving the purity of authentic flavours while journeying into the uncharted territories of taste.

 

Millstone was founded with one simple goal, to journey into taste. But what is taste?

Taste is usually referred to as the sensory attribute of food and drink, but at Millstone, we want to explore taste on a deeper level. From our packaging design to the way we approach and interact with our suppliers around the world, being tasteful is our way of creating a more pleasant world for all.

Our four foundations and guiding principles are Taste, Health, Design and Culture. We have explored these in great detail, and will continue to do so. Along this journey we realised two very important areas that we felt needed to be addressed. 

Seed to Shelf

Seed to shelf is our way of ensuring you get the most potent spices, herbs and salts available. But what is seed to shelf? As the name suggests, it’s the time it takes for our products to be harvested and to land on the store shelves, or in your home. Our seed to shelf is just three months. We can achieve this as a result of our direct contact and healthy relationships with smallholder farmers and an efficient logistics network. The vast majority of alternatives you can buy have a seed to shelf of up to two years! But what is the problem here? To put it bluntly, when spices and herbs have been sitting in storage for up to two years, they have zero antioxidant, polyphenol and nutrient availability, in other words; zero health benefits. Not to mention a reduced phytochemical count, which equates to compromised taste and health benefits. With Millstone’s seed to shelf of just three months, and our three barriers of packaging protection, we are able to preserve the health benefits and the potent flavours of our products for a long time.

Single Origin

Single origin is another key principle of Millstone and something we practice passionately. Each spice, herb and salt we produce comes from one single location. Our paprika for example, will come from one farm, our thyme from another farm, our spice blends may come from the same farmer who has multiple fields for growing different produce, but what we avoid is blending or mixing the same product from different farms or locations. We believe blending products from different farms or locations is the quickest way to water down a product's potency, in terms of both health benefits and flavour. By operating as a single origin producer we are able to maintain our high standards, build meaningful relationships with our farmers and see change in action as a result of being highly focussed in particular areas only.

Clean and Crafted

All of our products are free from anti-caking agents, bulking agents and fillers. All Millstone products are 100% natural the way nature intended. It was one of the very reasons Millstone was launched, as a reaction to unhealthy products that were on offer. Our products are handcrafted artisanally using centuries old techniques, often slower, but more refined and with purpose. You can see it, smell it, feel it and taste it. 

What we do know is this. Less is More. At every level, we strip out the unnecessary, add only the essential and always ask ourselves, how can we make it better?

The journey never ends, we are here in this present moment learning all we can. Here are a few snapshots which show the Millstone journey, our growing regions, our single origin smallholder produce, our dear people and our beloved Moroccan teas.

We never wanted to run a company, not a traditional one anyway, there is no time to waste, every second must be savoured. People, planet, process, product, these crucial elements can only be optimised in real world encounters. It was key from the start that Millstone was to be a vehicle for us to explore the unknown realms of taste. Be it spices, herbs, salts, design, storytelling and more. It had to encourage us to get out in the world, push boundaries, break the comfortable and welcome the uncomfortable. A wise man once said ‘A journey of a thousand miles begins with but a single step’, we welcome you on our journey into taste.

This is no ordinary salt, we use Pure Atlas, our purest salt, 100% hand harvested irresistible salt flakes rich in flavour and health benefits, you really can taste the cool Atlas air in every flake. Our hand harvested finishing salts come from the mineral-rich Ourika Valley in Morocco, where natural rock salt and mineral rich waters collide. Our salt mines date back to the 16th century where traditional salt production has been passed on, generation to generation. Our technique is sustainable, regenerative and respectful. We wanted to capture the vibrant colours of Morocco’s medinas, countryside, its atlantic coasts and ice cool mountains. The garlic adds warmth and depth, the lemon brings a refreshing sea breeze while the chili brings heat and a little adventure. All of this on a base of crunchy salt flakes harvested deep within the Atlas Mountains of Morocco. All of the ingredients are organic and single origin. Our Harissa Finishing Salt is as rich and diverse as the area we created it in, The Maghreb, more specifically the Ourika Valley in Morocco. We blend our Pure Atlas fleur de sel with organic harissa to create our award winning combination that works well with meat, fish and vegetable dishes, as well as simpler snacks. Our hand harvested finishing salts come from the mineral-rich Ourika Valley in Morocco, where natural rock salt and mineral rich waters collide. Our salt mines date back to the 16th century where traditional salt production has been passed on, generation to generation. Our technique is sustainable, regenerative and honours local culture. Our cumin seeds are versatile and pair well with most other spices and herbs, you should certainly be using it as a base spice but don’t be afraid to experiment with it as an ingredient and in your own spice blends.
